    • 8 tablespoons unsalted butter (1 stick)

    • ½ cup all-purpose flour

    • 3 cups whole milk

    • 1 teaspoon salt

    • ½ teaspoon black pepper

    • ¼ teaspoon nutmeg

    • 1 (8 ounce) package cream cheese, softened

    • 4 ounces sharp cheddar cheese, shredded (about 1 cup)

    • 4 ounces medium cheddar cheese, shredded (about 1 cup)

    • 4 ounces Monterey Jack cheese, shredded (about 1 cup)

    • 4 ounces Gruyere cheese, shredded (about 1 cup)

    • 4 ounces Parmesan cheese, shredded (about 1 cup)

    • 4 ounces Gouda cheese, shredded (about 1 cup)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Cook pasta according to package directions until al dente. Drain and set aside.
  3. While pasta is cooking, melt butter in a large saucepan over medium heat. Whisk in flour and cook for 1 minute, until smooth.
  4. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  5. Reduce heat and simmer for 5 minutes, stirring occasionally, until sauce has thickened slightly.
  6. Remove from heat and stir in salt, pepper, and nutmeg.
  7. Add cream cheese and stir until melted and smooth.
  8. Stir in cheddar cheese, Monterey Jack cheese, Gruyere cheese, Parmesan cheese, and Gouda cheese until melted and smooth.
  9. Add cooked pasta to the cheese sauce and stir to combine.
  10. Pour into prepared baking dish.
  11. Bake for 20-25 minutes, or until golden brown and bubbly.
  12. Let stand for 5 minutes before serving.
