- 1 (8 ounce) package cream cheese, softened

- 4 ounces sharp cheddar cheese, shredded (about 1 cup)

- 4 ounces medium cheddar cheese, shredded (about 1 cup)

- 4 ounces Monterey Jack cheese, shredded (about 1 cup)

- 4 ounces Gruyere cheese, shredded (about 1 cup)

- 4 ounces Parmesan cheese, shredded (about 1 cup)

- 4 ounces Gouda cheese, shredded (about 1 cup)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Cook pasta according to package directions until al dente. Drain and set aside.
- While pasta is cooking, melt butter in a large saucepan over medium heat. Whisk in flour and cook for 1 minute, until smooth.
- Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
- Reduce heat and simmer for 5 minutes, stirring occasionally, until sauce has thickened slightly.
- Remove from heat and stir in salt, pepper, and nutmeg.
- Add cream cheese and stir until melted and smooth.
- Stir in cheddar cheese, Monterey Jack cheese, Gruyere cheese, Parmesan cheese, and Gouda cheese until melted and smooth.
- Add cooked pasta to the cheese sauce and stir to combine.
- Pour into prepared baking dish.
- Bake for 20-25 minutes, or until golden brown and bubbly.
- Let stand for 5 minutes before serving.
